Vegan friendly mixed bean and duck with couscous

Tasty, quick and easy meal.

  • Half a pack of Linda McCartney shredded hoisin duck
  • 1 White onion
  • 1 yellow and orange ¬†sweet pepper
  • Handful of cherry tomatoes halved
  • 3 spring onions chopped up
  • 4 small chestnut mushrooms
  • 4 white mushrooms
  • 1 tin of spicy mixed beans
  • 250g of wholewheat couscous
  • Salt
  • Pepper
  • Garlic powder
  • Fresh lemon juice
  1. Heat a saucepan with a little water or 1cal spray
  2. Slice the onion and add to the pan until softened
  3. Slice the sweet peppers and add to the pan until softened
  4. Slice the mushrooms and add to the pan until cooked
  5. Slice the spring onions and add to the pan
  6. Cut the cherry tomatoes in half and add to the pan
  7. Add the tin of mixed beans and let it cook for 5-6 minutes
  8. While cooking put the couscous in a bowl
  9. Cut the lemon in half, juice it/squeeze it and add to taste
  10. Add the salt pepper and garlic powder to taste
  11. Add boiling water to cover the couscous
  12. Stir the ingredients until fully combined
  13. Cover with a plate until water is absorbed
  14. And serve I used a cookie cutter for the heart
